This recipe also works well with chicken cutlets and turkey escalopes. It is from St. Vincent d’Aosta in northwestern Italy and is slightly modified by introducing almonds in the breading. As a use for the legs of the rabbit see the confit. For vegetable accompaniment, use the Mediterranean medley of stir-fried vegetables.
