The name of this dish is a misnomer for a true braise. It is expensive and challenging but the results are worth the effort. Please, no substitute ingredients for the truffles or foie gras; the cost will be less if you use Oregon black truffles which have a delightful aroma and flavor. If truffles or foie gras are not possible, simply prepare three times as much duxelles for the stuffing, and the pigeons will be delicious in a different way. Serve with the gratin of potatoes and
