This blanquette-type stew comes from the Italian Val Veni, one of the valleys around Aosta, The lamb can be replaced by veal, pork, or the dark meat of chicken.
In a sauteuse pan, heat the oil over medium-high heat. Sear the cubes of lamb without letting them brown, then salt and pepper the meat well. Tilt the sauteuse to bring the meat toward the pot handle, spoon out the oil, and reserve it.
Add enough of the stock to the sauteuse to just cover the meat and slowly bring to a boil. Add the clove-stuck onions, the carrot, rosemary, and bouquet
