As was served in some of the many bistros of Les Halles, when this huge market was still at the center of Paris, If sirloin strip is too expensive, use sirloin tip. If you like marrow, add a long marrow bone cut into sections to the broth, toast long slivers of French baguette, spread the cooked marrow on each toast, salt and pepper it, and serve the toasts alongside the sliced meat.
