Homemade Apple Butter

• 4 cups Apple Puree
• ¾ cup apple cider
• ¼

Place all the ingredients in an enameled cast-iron pan. Bring to a boil, then reduce the heat to a slow and steady simmer. Reduce the mixture, stirring occasionally, until no liquid separates from the apple butter. If dropped onto a plate, the apple butter should form a round droplet that does not flatten. Pass through a blender to equalize the texture by destroying the always present small bum
