This is a master recipe for all marmalades of whichever citrus fruits you may use. 1 have made many variations over the years and always loved the results.
The successive soakings and boilings of the fruit slices in the juice-and-water mixture are used to extract as much natural pectin from the fruit skins as possible and to soften the rinds. It is up to you to do the mathematics of calculating the amount of sugar and water to be used.
