The original recipe is made with bacon fat or lard and still in use in Scotland and Wales. It is excellent served as bread with salmon chowder and for breakfast with bitter orange marmalade and a dab of butter. The steelcut oats, which are Irish, may be replaced by the same amount of additional rolled oats, but they do add a pleasant crunch to the cakes.
