This brioche is to be molded into a French tall cylindrical mold No. 150 (meaning 15 centimeters in diameter). If you want to make small brioche with cute heads, prepare this same recipe using only ¼ pound butter, and see for instructions on how to shape the rolls. You will need twelve small brioche molds 2 to 3 inches in diameter. You can also use large muffin tins, although they are not as elegant. If you use the rich mousseline formula for brioche
