This icing, the traditional icing for pastries made with cream puff dough, is also usable as a filling for chocolates, and can be shaped into patties and chocolate dipped.

A marble slab is most useful in the making of fondant; if you do not have one, wash a large enameled broiler pan with soap and water. Dry it with paper towels only, and freeze it for 2 hours.
