Baking powder until twenty years ago came in two versions, single-acting powder and double-acting. We are now mostly left with the double-acting. It is important to still have some knowledge about single-acting though, for should one run out of double-acting powder it is easy to make your own single-acting baking powder by blending together, by volume, two parts cream of tartar with one part baking soda.
