For years, I hosted a vegetarian Friendsgiving, and because my love of desserts was well known, I was always in charge of preparing them. One year, I decided to make, rather than buy, the ice creams to go along with the desserts, and one of them was a fresh ginger ice cream. The zingy spiciness and heady warmth of the ginger paired perfectly with the sweet, creamy ice cream base. My friends were blown away, and I had the idea that sparked Malai!
