Plain and simple, this ice cream came to be at Malai because my dad only likes to eat his carrot halwa, a carrot pudding spiced with cardamom, with a scoop of vanilla ice cream on top. He’s a bit extra like that (I know where I get it from). As he was enjoying this dish one day, I thought about how easily this dessert, already made by cooking carrots in milk, could be transformed into an ice cream. It tastes just like the dessert in frozen form. Needless to say, my dad is pleased.
