Kheer is the South Asian version of rice pudding. Every subculture—indeed, every family—makes it differently. My family’s kheer is very milky, the rice is extremely overcooked and soft, and the only spice used is nutmeg. And that’s exactly how I like it. In ice cream form, kheer is glorious—lightly spiced ice cream with bits of soft rice to break up the creaminess. There is nothing like it. This ice cream can be easily modified to incorporate whatever spice you like in your rice pudding.
