Jaggery Cones

I almost didn’t include this recipe in the book. Who has a waffle cone maker? Who has a cone mold? Who is going to source the ingredients for this very specific cone recipe? The thing is, the cones are just that good. They are perfectly crisp and sweet and have that deep flavor of jaggery. They are worth the cone maker and the mold and getting the ingredients. (But if you don’t have those things, you can also make them in a frying pan.) And they are worth it because they are used in the rec
