I first had this sweet-savory biscuit at a hotel in Bombay. The taste was so unexpected—the savory notes of the fruity cumin and peppery ajwain with the sugary bite of a shortbread cookie—and so delicious. The hotel was kind enough to give me the recipe, which I’ve played with since. These biscuits are incredible with a cup of chai, as part of a cheese board and, of course, with a scoop of ice cream. If you can’t find ajwain seeds, caraway seeds are a great substitute.
