Cucumber Sauce

Method

Peel two large cucumbers and take out the seeds; put the cucumbers in a pan with about one ounce of butter, cover over the pan and let them draw down on the stove till tender, add a few drops of lemon juice and then half a pint of thick creamy Veloute sauce, a very little apple green colouring and a little salt.
