Melted Butter Sauce


Put into a stewpan two ounces of good butter, and let it melt; mix with it one ounce of fine flour, and stir together till smooth; then mix into it by degrees half a pint of hot water, add a pinch of salt and six or eight drops of lemon juice, and stir till it boils; then wring through a tammy or fine strainer, and serve while hot. This quantity is sufficient for four to six persons.
