Rice for Curry


Put one pound of Patna rice in a stew-pan, with enough cold water to cover it, with a pinch of salt; bring to the boil, strain off, and wash the rice in cold water, put it in about three quarts of boiling water, and cook for twelve to fifteen minutes; strain it off in the colander, pour a little hot water over it, put a cloth over the colander, and put the rice to dry in the screen for two or three hours. If properly prepared every grain will be separate.
