It is comforting to be able to remember my mother telling me, with her wonderful laugh and sparkling eyes, about this personalised version of steak tartare. She had a great enthusiasm for cooking and I love her idea of incorporating a flavoured mayonnaise instead of raw egg yolks into the meat. Only use very fresh, and never frozen, beef for this dish.
