You might not think it but cos lettuce is excellent briefly cooked. For this recipe I blanch the leaves so that they can be stuffed with paprika beef, tomatoes and onions; it is an unusual and delicious dish for a summer lunch, or as part of a cold buffet. As an alternative to the lettuce I often use Savoy cabbage leaves which take a bit longer to go limp.
