I love eating things with hidden surprises, and meatballs provide a perfect opportunity. Here the soft cheese centre blends perfectly with the spiced meat; lovely for a summer meal served with mint leaves and a crunchy onion salad.

Ingredients

  • 500 g lean beef or lamb mince
  • 8 cardamom pods
  • 2

Method

Place the minced beef in a large mixing bowl and mash thoroughly using a wooden spoon until pasty and sticky Carefully make a small incision in the cardamom pods and extract all the seeds. Place the cardamom seeds, coriander seeds and cloves into a coffee grinder or pestle and mortar and grind to a fine powder. Using a pestle and mortar or a small bowl and metal spoon, pound and grind the garli
