These little open-topped pies can be served at room temperature as part of a light lunch or at a supper party. The lean beef is still pink in the centre and holds a layer of smoked oysters, which imparts a lovely smoky flavour to the whole pie. The crisp pastry is similar to a good hot water crust on a pork pie but is instead made with olive oil.
