Name: Meatloaf with Blue Cheese
Yield: Serves 4–5
Ingredients: butter, for greasing; 500 g beef mince; 75 g chestnut mushrooms, finely chopped; 100 g smoked rindless streaky bacon, finely chopped; 1 large garlic clove, finely chopped; 1 small onion, finely chopped; 50 g fresh brown breadcrumbs; 1 rounded tsp dried oregano; 6 tbsp tomato ketchup; 2 eggs, lightly whisked; sea salt and freshly ground black pepper; sea salt and freshly ground black pepper; 100 g Saint Agur or Gorgonzola cheese; 100 g Saint Agur or Gorgonzola cheese; 1 tbsp whole milk; ½ tsp mild chilli powder

I never tire of this. After I tasted American meatloaf in New York in 1967 I began experimenting with different versions; this is the one I, and all others who have tried it, like best. Baked potatoes or perhaps even more suitable, baked sweet potatoes, can be cooked in the oven at the same time, but I prefer it served with a crisp green salad.
