This first course really is a surprise, and a very popular one. Under a deceptive topping of lemon slices is a sensual filling of tender raw beef mixed with avocado, egg yolks, herbs and mustard. Only ever use very fresh, and never frozen, beef for this dish.
Using a sharp knife, cut the avocados in half lengthways and carefully remove the stone. Cut a very thin slice off the top of each avocado half, including the skin. Smear these slices with a little of the lemon juice to prevent discolouration and leave to one side.
Spoon the remaining avocado flesh out of the shells and into a bowl. Do not throw away the shells. Add the remaining lemon
