Ingredients: 50 g unblanched whole almonds; sea salt and freshly ground black pepper; 2 tsp caraway seeds; 425 g tin of pitted black cherries, in juice; juice of ½ lemon; 2 tsp garlic cloves, finely chopped; 1 kg lean pork mince; 1 red onion, finely chopped; 2 tsp cornflour; 125 g Camembert cheese, cut into 8 pieces; 1 tsp egg, lightly beaten; olive oil, for oiling; 40 g flaked almonds

Who would think of a bombe surprise made of meat? Oddly enough I did, and it showed me once more how humble mince inspires culinary invention. Here, in the same way as an ice cream bombe, the outer layer hides a mystery interior. It is certainly a conversation piece. You could try using goat’s cheese instead of Camembert and walnut halves instead of the almonds.
