You may be doubtful at the idea of hot avocados but these are a real treat. Serve with sprigs of watercress and hot crusty bread.

Ingredients

  • 2 red peppers, seeds and stems removed and roughly chopped
  • 5 tsp garlic cloves, skin left on
  • 1

Method

Place the peppers into a saucepan of boiling water with the whole cloves of garlic. Cover the pan, reduce the heat and simmer gently for 10 minutes. Drain the peppers and press the soft garlic out of their skins. Place the peppers, garlic and lemon juice into a food processor and blitz to a smooth purée. Season to taste and set to one side.
