Pork Rolls in a Lemon Sauce

These delicious little rolls are beautifully tender. Pork fillets are used to wrap a stuffing of veal mince and tomato, enhanced by crushed coriander seeds. For the best aroma always grind whole spices in a pestle and mortar or coffee grinder as and when you need them.

Ingredients

  • 1 tbsp olive oil, plus extra for oiling
  • 1 red onion, chopped
  • 2–3 large ga

Method

Heat the oil in a large pan over a low heat and fry the onion until soft. Add the garlic and ground coriander and stir for 30 seconds. Increase the heat, add the veal and cook until separated and browned. Lower the heat. Make an incision in the tomatoes, place in a bowl and cover with boiling water. Leave for 1–2 minutes, remove and discard the skin and finely chop the flesh. Add to the pan and
