Ingredients: 2 tsp caraway seeds; 3 tsp garlic cloves, finely chopped; 2 tsp ground coriander seeds; 75 g butter, softened; sea salt and freshly ground black pepper; 500 g skinless and boneless chicken thighs; 1 kg courgettes, trimmed; 50 g sesame seeds; olive oil, for oiling; 50 g fresh brown breadcrumbs; 2 egg whites; 100 g unsalted butter, cut into pieces; ¼-½ whole nutmeg, freshly grated; a handful of flat-leaf parsley roughly chopped; 420 g tin of chickpeas, drained

This very healthy family dish will keep everyone guessing. To this day nobody has been able to fathom exactly what it is they are eating. A roasted sesame encrusted roll is in fact delicately spiced chicken mixed with chickpeas. And the bright green sauce Is simply a purée of courgettes and parsley. Despite its mystery, everyone is always ecstatic about the taste.
