This is rather like a game pie; eaten cold, it is perfect for parties, accompanied by hot new potatoes. During autumn and winter most butchers sell wood pigeon but you can use a small guinea fowl If you can’t find them.

Ingredients

  • 2 wood pigeons, flesh removed and bones discarded
  • 350 g skinless and boneless chicken thighs, roughly chopped

Method

Briefly blitz the pigeon and chicken in a food processor. Mix with the veal, peppercorns, anchovy fillets, mustard, juniper berries, sage, soured cream and seasoning.

To make the pastry, sift the flour and salt into a bowl and make a well. In a saucepan, gently melt the butter with the water and pour into the flour. Stir until evenly mixed, add the egg and continue mixing vigorously unt
