  • cups thinly sliced garlic (about 3 heads)


Heat a wok over high heat for 30 seconds. Add the peanut oil and garlic and stir. Reduce the heat to medium and allow the oil to come to a boil. Reduce the heat to low and cook for 10 minutes, stirring once every minute, or until the garlic turns light brown.

Turn off the heat. Strain the oil through a fine-mesh strainer into a heatproof bowl and allow to cool to room temperature. Set t
