More brands of chili sauce and hot pepper sauce are on the market today than anyone can possibly count. They come from around the world, are of varying degrees of hotness, and many of them contain preservatives and other additives. Make your own chili sauce and it will be both free of preservatives and as hot as you want it. You can use any fresh hot red chiles you like, but I have had great success with fully ripe red jalapeños. The more mature they are, the more intense the heat. Do not u
