Dried scallops are a costly delicacy that are traditionally slowly dried in the sun, which accounts for their golden color, their dried texture reminiscent of tiny stalks, and their expense. They are used sparingly but effectively to enhance other dishes, from stocks to stir-fries. I use them steamed for their distinctive, pungent taste. Dried scallops are prized ingredients, seldom found in noodle parlors and in expensive restaurants. The Chinese will eat a few foods no matter their price.
