Scallops are common along China‛s eastern coast, particularly in the South China Sea off Hong Kong, where they are prized for their whiteness and their firm texture. Usually they are served steamed in their shells, with their orange roe intact. Such scallops are common in Europe, too, but are only infrequently seen in the United States. If you find scallops in their shells with their roe attached, snap them up.
