This is an alternative to roasting a whole duck. The technique is simple and quick. Once cooked, the breasts can be eaten as they are or saved for future use. They have a pleasantly faint sweetness, which makes the meat a good addition to stir-fries and other recipes. I recommend accompanying them with Stir-fried Shanghai Bok Choy.
