This dish is a fine example of the inventiveness of Hong Kong‛s chefs: basic ingredients combined in an unusual manner to create a perfect blend. Salted eggs are a Cantonese tradition, and cooking with their grated yolks is a Fujianese custom. In other parts of China, salted egg yolks are used in different ways, perhaps most notably set in the center of Autumn Festival moon cakes, which nowadays are found not only in Beijing, but elsewhere as well.
