Veal is not widely known in China except in larger cities such as Shanghai, Beijing, Guangzhou, and Hong Kong, where it is known as “meat of the suckling cow.” In Hong Kong, it is commonplace. Black pepper is also rare in Chinese cooking. This preparation is a fine example of what Hong Kong does well: taking Western foodstuffs and making them Chinese.
