  • 8 ounces dried sea cucumbers (4 pieces)
  • 3 cups cold water

Method

Soak, clean, and rinse the sea cucumbers for 2 days as directed.

In a large pot, combine the soaked sea cucumbers, water, ginger, and scallions and bring to a boil over high heat. Reduce the heat to low, cover, leaving the lid slightly cracked, and simmer for 1½ hours, or until tender. Turn off the heat and let the sea cucumbers cool to room temperatu
