These small dumplings come with both a story and a significant history. According to legend, they were born in the imperial kitchen when a cook, making dumplings for the emperor, forgot a batch that was slowly cooking. They were singed brown, slightly burned. With no time to spare, and an impatient, hungry emperor waiting, the cook, a nimble and adaptive fellow, arranged the dumplings on a platter, burned sides up, and presented them to the emperor as a new dish that he called quotie
