Reminiscent of strudel, this flavorful loaf was once a popular steamed preparation in dim sum restaurants, but nowadays it is seldom seen. In China, this traditional dish, called nor mai geun by the Cantonese, is regarded as a winter dish because it warms the body. It was a personal favorite in the dim sum teahouses when I was growing up, a dish for sharing, and I continue to share it with my students in my dim sum classes.
