Even in Beijing, this famed Chinese reparation is referred to as both Peking duck, after the old English name of the capital, and Beijing duck. Regardless of what the dish is called, it must be prepared in the classic manner, in three courses: The crisp skin, with a hoisin-based sauce; then the duck meat stir-fried with vegetables; and finally a soup made with the duck‛s bones.
