These are the classic pancakes, or baobing, used for wrapping the crisp skin of Peking duck and for serving Mu Shu Pork. I have seen tortillas suggested as a substitute, but their taste is inadequate and they are too thick and chewy. You may also find ready-made fresh or frozen pancakes. I don‛t recommend them. They lack elasticity and tend to crumble when heated.
