This Sichuan preparation is unusual. Although it is flavored with two Sichuan staples, hot red oil and Sichuan Peppercorn Paste, neither is used in the actual cooking of the chicken. Rather, these intense flavorings are used to dress the dish, which is always served at room temperature. The presentation is dramatic as well, with the chicken served atop Deep-fried Rice Noodles—perfect banquet fare.
