  • 12 sea scallops
  • 6 cups peanut oil
  • 5 tablespoons water ch

Method

Cut the scallops in half horizontally to create 24 medallions. Heat a wok over high heat for 1 minute. Add the peanut oil and heat to 350°F on a deep-frying thermometer.

While the oil is heating, pat the scallops dry with paper towels. Spread the flour on a sheet of waxed paper and toss the scallops with the flour, coating evenly.</
