I remember when Darren and I were working through the opening menu for Masu. I had planned a more traditional version of this dish, called horenso oshitashi and using spinach and sesame. Darren was adamant that this contemporary version was better. After a lot of discussion, we ran with Darren’s version which is the recipe here. To his credit it is now both one of my favourite salads on the menu and a best-seller. Hats off to Darren!
