This fresh and lively dish is traditionally made during summer, as the noodles are served cold and chilled. The noodles can be made gluten free if you replace the plain flour with additional buckwheat – just be careful as the dough becomes very chalky and a little more difficult to work with. You will need a pasta machine for the noodles.
