I remember catching whitebait at night on Kawau Island when I was a kid. We used to get tubs of whitebait in a few scoops of the net. In those days it was one egg to one cup of whitebait to make the purest of fritters. Today I like a little boost to the flavour and bling them out with the shichimi pepper and lime . . . Not sure what Mum thinks of this version, but I think it’s a simple and super-delicious way to serve whitebait.
