Chawan mushi is traditionally a savoury dish, a very soft baked custard usually made with either chicken or prawns. When flipped into a dessert, it makes a sensationally light baked cream. This is one of Kelly’s all-time favourites and a staple on the menu. You can easily change the fruit topping according to what’s seasonal.
