I have always wanted to work a pavlova onto the Masu dessert menu, so I asked Sam, our pastry chef, to create something along those lines. Well, on the last day of photographing this book, she casually prepared this recipe; once I tasted her pavlova I knew it had to be part of the book. I can see this is going to become a signature dessert item – thanks, Sam.
