This is a great little condiment to have up your sleeve. These chips add a mild garlic flavour and crispy texture to salads, tataki and other savoury dishes.
Start by peeling your garlic cloves. Then, with either a sharp knife or a mandoline, slice the garlic into very thin slices across the clove.
Soak the sliced garlic in the milk for about 15 minuties to draw out some of the strong garlic flavour and any bitterness.
Heat the oil to about 150Β°C in a medium-sized saucepan.
