Although you can get fresh cilantro all year round from the market, I rely on my garden’s herbs. As soon as the summer days get hot, my cilantro blooms and seeds, leaving me without cilantro leaves. In Annia Ciezadlo’s wonderful book Day of Honey, I found the recipe for this cilantro-garlic paste (taglieh) that has become an essential part of my repertoire. It adds flavor to all kinds of dishes, sauces, and dressings. I use a blender
